Tofu Scramble

No guilt, totally vegan breakfast scramble! 

It is not only guilt free, it's gluten free, and packed full of nutritional ingredients such as fresh herbs, colorful peppers, turmeric, and tofu. 

Tofu Scramble

INGREDIENTS

  • 1 block extra firm tofu {organic is best}

  • 1 small onion 

  • 1 C colorful bell peppers 

  • 1/2 C baby belle mushrooms

  • 1/2 C nutritional yeast

  • 1 tsp turmeric powder

  • 1 tsp smoked paprika

  • salt to taste 

  • fresh parsley sprigs

INSTRUCTIONS​

  1. Begin by draining your tofu {set aside on a towel to drain completely}

  2. Prepare your veggies by dicing the onion, peppers, and mushrooms.

  3. Using a cast iron pan, pour oil onto pan and allow to heat on low-medium heat. Once pan is warm, add onions and allow to cook until translucent.

  4. Add peppers and mushrooms and cook for 5 minutes, stirring occasionally.

  5. Add tofu by crumbling the tofu in your hands as you add it to the pan.

  6. Add remaining ingredients and stir to mix completely.

  7. Continue to cook for 5-10 minutes, letting the tofu infuse all the flavors.

Add fresh parsley or diced tomatoes to garnish. I love to serve this with fried potatoes too!
