Sweet 
Potato 
Hash

Sweet and savory, what every good meal contains!

Growing up on the farm, one of my favorite smells was walking into the house and smelling fried potatoes ... mmmm!

Serves: 4       Prep time: 10 minutes      Cook time: 25 minutes  

INGREDIENTS

 

  • 2 medium sweet potatoes 

  • 2 TBSP olive oil

  • 1 small onion

  • 2 cloves of garlic

  • 5 baby bell peppers or 1 medium bell pepper

  • 1 tsp salt

  • 1 tsp thyme 

  • 1 tsp rosemary

  • 1 tsp sage

  • 1 tsp oregano

  • parsley to garnish *{optional}

  • pepper to taste

Step 1

Wash your sweet potatoes and peel them{keep your peels to use for another recipe if you'd like}. Slice your potatoes into 1/4" slices then dice them into 1/4" cubes. You can cut the potatoes smaller if you desire. Dice your peppers the same as your potatoes. Next dice your onion into 1/8" dices, nice and small. Mince your garlic and set all ingredients aside unitl your oil and pan has heated up.

Sweet Potato Hash

Step 2

Add oil to your pan and turn onto medium heat. First add the onion and garlic until golden. Next add in your potatoes and peppers. If you find your potatoes are sticking to your pan feel free to add a drizzle of oil on top. Grind your herbs together then add in your seasonings and spices at this time and give your potato hash a good stir.

Step 3

Your sweet potato hash is complete when your potatoes have become tender on the inside and crispy on the outside. Garnish with fresh parsley if desired and add salt and pepper to taste. Serve this with a side of fresh fruit, a bed of leafy greens, and a fresh granola bar with plant based yogurt for the perfect Saturday morning brunch meal.
