Fiesta Potato Salad {Vegan & G.F.}
I love that this potato salad has all the right textures, the traditional comforting flavors, and is completely vegan and gluten free. Take this to your next potluck luncheon or serve this as a side to any summertime meal, it's sure to be the highlight of your meal.
Ingredients & Directions

2 lbs organic russet potatoes

2 small jalapeños {deseeded}

1 celery stalk

1/2 C red radishes

1 TBSP dehydrated carrots

1 TBSP dehydrated red pepper

1 tsp coarse sea salt
-
1 tsp smoked paprika

pepper to taste
Step. 1
Begin by washing the potatoes thoroughly. Then cut the potatoes into 1/4" pieces.
Bring a large pot of water to a rapid boil and salt your water before adding potatoes.
